Burger with labneh and grilled vegetables
A hearty burger with grilled vegetables, creamy labneh, and white cheese for a surprisingly flavorful combination. The Mekkafood Burger provides the savory base, while sweet potato fries complete the dish perfectly.
Ingrediënten
- 4 Mekkafood Burgers
- 4 burger buns
- 100g white cheese
- 2 red onions
- 2 red bell peppers
- 2 eggplants
- 6 tsp paprika powder
- 5 tbsp olive oil
- 80g labneh
- 500g sweet potato fries
Bereidingswijze
- Prepare the Mekkafood Burgers and sweet potato fries according to the package instructions.
- Slice the eggplant and cut the bell peppers into strips. Mix the paprika powder with the olive oil.
- Spread the sliced eggplant and bell peppers on a baking sheet, brush with the spice mixture, and season with salt and pepper. Bake in the oven at 200°C (400°F) for 15 minutes. Toast the burger buns during the last 2 minutes.
- Slice the red onion into half-rings. Heat a frying pan with some butter and sauté the onions until golden brown.
- Slice the buns open. Spread the labneh on the top half of the buns. Top with the red onion.
- Layer the bottom half with a few slices of eggplant and strips of bell pepper. Place the burger on top. Crumble the white cheese and sprinkle over the burgers. Close the bun.
- Place the burgers on plates. Serve with the sweet potato fries and the remaining vegetables.
